Raw Food 4 Day Challenge

The challenge is over.  After 4 days of being on a raw food diet, we can say that the diet certainly was a challenge, but was it worth it?

I personally felt different.  My body felt light and healthy.  I lost all craving for sugar.  (I did not have any cravings for dairy or grease, but I generally do not consume those products so I cannot attribute those factors to the raw food diet.) I woke up this morning to wanting to eat my berry breakfast, but today with a crossiant, but alas I was out of berries.  That will be quickly changed so I can maintain my fruit consumption first thing in the morning.

One of our customers joined us in our challenge.  Here is what Jan had to say about her experience: "
I have been using the detox recipe found in a magazine I bought at the Healthy Grocer.  2 cucumbers, 1 green apple, kale, romaine lettuce, parsley.  I have been feeling a lot better and my sugar levels have gone down."
A few weeks ago I watched Forks over Knives.  While I always thought highly of a raw food diet, my support for such was heightened after watching the documentary.  After doing 4 days of the diet, I completely support a raw food diet for those who are looking for a light cleanse, have health issues or looking to loose weight (but under the care of a physician when undertaking this diet).  I believe our daily diet should always incorporate an abundance of fruits and vegetables and particularly during spring and summer, should be consumed raw.  In Ayurvedic medicine, you cool the body when it is too hot and warm the body when cool to keep a balance in the doshas.  Raw food which would be cool or at the very least, room temperature, would make sense for the coming warmer months.

How is everyone's raw food diet going on our last and 4th day?
I have reaffirmed the notion that coconuts and I do not get along - even in small amounts.  So, I have opted to not eat the raw granola this morning. We will see how long I last.  Maybe I will skip ahead and munch on some almonds.

Day 1 was the hardest day to adjust to the diet.  I finally realized how much carbs and sugar I eat throughout the day that keeps me full, but without the nutrition of fruits and veggies.  Day 2 and 3 were the easiest for me, but I think being in bed sick helped.  Being sick and still keeping with the challenge, by meals were easy and meager.  Breakfast was still a fruit bowl with raw granola followed by a banana.  Lunch and dinner were salads (baby greens, cucumber, sprouts, snow peas with a homemade vinagrette of cold-pressed olive oil, Bragg's raw apple cider vinegar, manuka honey and sea salt) with Dr. Flaxer's crackers followed by celery and nut butter about an hour later.  Snacks throughout the day were dried mango, grapes, and almonds.  By the end of Day 2, any sense of being hungry was gone.  By end of today (Day 3), despite congestion, my overall feeling of health was restored.  I had no craving for sugar or chocolate and vowed that sugary and chocolate snacks would be restricted to once a day when the challenge was done.  In all honesty, I don't know if I will stick to that promise because now I know your body craves what you put in it.  If you are eating loads of sugar, your body will crave more sugar.  If you are eating healthy foods, you are going to crave healthy foods.

Last night I realized I could not have my beloved hot tea for 4 days.  I think I drank 12+ cups of hot green tea last night.  I never thought I would miss tea more than chocolate.

I woke up this morning to little produce in my fridge.  I should have gone out the day before, but it didn't occur to me how I might wake up Sunday morning with little I was able to consume.  So in a need to gather my breakfast, I grabbed a few carrot sticks from the kitchen and went shopping.


My breakfast Sunday morning:
Handful of Strawberries halved
Handful of Blackberries
Handful of Blueberries
1/4 Cup Raw Granola (buckweat groats, sunflower seeds, dates, sesame seeds, hemp seeds, cacao, coconut cashews, etc.)
1/4 Teaspoon Raw Manuka Honey

In the past 24 hours of considering this diet, here is my plan of action:
Juice first thing in the morning
Eat every 2 hours
Eat a bowl of fruit with raw granola and honey (for medicinal purposes) daily
Lunch will be an easy - salad
Dehydrated foods can be incorporated in small amounts
Snacks will consist of dried fruits and raw nut butter and celery or apples
Dinner will be the most complex meal of the day

It will be interesting to try more raw foods that are pre-made as I experiment over the next few days.  So far it seems like coconut is a staple in everything (and of which I seem to have a mild allergy to).

Seeds for Health

We've all heard the saying "The best things come in small packages."  Nothing could be more true when it comes to seeds.  When we think of seeds our minds may wander from garden seeds we plant during the spring to the Chia pet sold for decades around the holidays.  Seeds for snacking however, can be packed with powerful nutrients.


Chia seeds have been consumed for hundreds of years and were a staple of the Mayans and Aztec peoples.  High in fiber and omega-3, these seeds may help support the reduction of LDL ("bad" cholesterol) and support overall heart health.  Chia seeds can also be a great substitute for a thickening agent when cooking.  Those who are gluten free or have food allergies may find this useful in thickening soups and more.

Flax seeds, like Chia seeds, are also a high omega-3 food.  Used by the Egyptians, flax seeds can help the digestive process and support the stabilization of blood sugar.  In recipes, this tasty seed can be mixed with oatmeal to make a breading for chicken.

Hemp seeds are packed with protein (10 grams of protein in 1 oz of hemp seeds).  These superstars may also support cardiovascular health with its arginine and fiber content.  Try them in your next pesto recipe by halving the amount of pine nuts and replacing with hemp seeds.  With a similar taste, you may not even notice the difference, but your body will thank you.

Pumpkin seeds are often found in Mexican cooking and in a grab bag at the convenience store.  These seeds are high in monounsaturated fats which help support the lowering of LDL.  They also contain tryptophan (great for those looking for a good night's rest) and glutamate (helps relieve anxiety).  Pumpkin seeds are also full of Vitamin E and minerals.

Sesame seeds when mixed with rice and beans create a complete protein.  They are found to be high in calcium and magnesium, as well as a good source of fiber. Try this seed as a crust on tuna or chicken, or add to your next bowl of rice, or salad.

Sunflower seeds are easy to spot during late summer coming from beautiful blooms reminding us it is time to harvest our crops.  These seeds are a great source of protein, has 75% of the daily intake of vitamin D, and a great source of a variety of minerals, Selenium and Vitamin E.

Raw Foods

This morning staff member Susan joined WPMT Fox 43 to discuss Raw Foods.  Watch the segment.

Here are the recipes showcased on the segment.

Asian Carrot Noodles garnished with Carrot Sticks


Green Giant Juice (Made to order by The Healthy Deli)
Contains:
  • Celery
  • Broccoli
  • Cucumber
  • Kale
  • Parsley

Asian Carrot Noodles
5-6 cups peeled Carrot "noodles"
1/2 cup fresh Mushrooms
1 cup fresh baby Spinach

Sauce:
1 Lime freshly squeezed and strained
2 cloves minced Garlic
1/2 cup Raw Almond Butter
1 tsp Curry Powder
1/2 tsp minced Ginger
1/4-1/2 teaspoon Cayenne Powder (set your level of spice)
1/3 cup fresh cilantro
1/4 cup Coconut Water
1/4 cup freshly made Coconut Milk (strained) or Raw Coconut Cream

1) Using a peeler, peel off first layer of dirt/skin from carrots.  Continue to peel remainder of carrot into a bowl.
2) Chop mushrooms and set aside.
3) In a separate bowl mix sauce ingredients in a blender until well mixed.  If sauce is too think, you may thin it with additional Coconut Water or Coconut Milk.
4) Mix sauce and carrots together, cover and let sit in the refrigerator for approximately 30 minutes or more to let the carrots soak up the sauce and tenderize.
5) Mix carrots and sauce with mushrooms and add baby spinach.  Serve.

*Sauce will yield extra to use on other wonderful foods you will make throughout the week.


Leaf Wrap Burritto
"Wrap" (i.e. Large Collard Greens, Swiss Chard, or Iceberg Lettuce)
1 Bell Pepper (Red or Yellow for color, sliced in 1" strips)
1/2 Red Onion
Half Zucchini (thinned in mandolin)
Half Cucumber (sliced in 1" strips or thinned in mandolin)
2 Scallions cut into large pieces
Lettuce (Arugula, Baby Spinach, etc.)
Handful Alfalfa Sprouts
1 Tomato chopped

Mayo:
1 Avocado
1/3 Cup Cilantro
Juice of 2 Lemons squeezed and juice strained

1) Cut and scoop meat of avocado. Place in blender and add Cilantro and Lemon Juice.  Mix well.
2) Place "Wrap" on plate and spread avocado mayo mixture on.
3) Add ingredients to build burritto
4) Roll and enjoy!
